Mocktail: Clover Club

A mocktail doesn’t have to be just juice or a glass of Pellegrino with a lime. It can also have texture and botanicals and complex flavours. That’s what I love about this Mock Clover Club.

A full proof version of this drink is one of my favourites to make and order when I’m out at a bar. It’s pretty, frothy and all around delicious. So it was natural that I decided to explore a zero proof version. In place of gin, I use Lumette London Dry - a beautiful botanical, non-alcoholic spirit from the team behind Sheringham Distillery on Vancouver Island. Sheringham was awarded “The World’s Best Contemporary Gin” at the 2019 World Gin Awards in London, England, for their Seaside Gin.

MOCK CLOVER CLUB

2 oz Lumette London Dry
3/4 oz Lemon juice
1 Tbsp Raspberry jam
1 oz Egg white
5 fresh raspberries

Dry shake the egg white. Add raspberries and using the muddler, crush berries. Add rest of ingredients, plus ice and shake for 10 seconds. Double strain into a chilled coupe glass.
