Happy Easter, everyone! Just thought I'd post one of my easy, go-to recipes that's a major crowd-pleaser. I'm making this for Easter Sunday dinner tonight and it takes nearly no time at all! Happy Easter to you and your family!
BLUEBERRY-LEMON MASCARPONE TART
1 pint of blueberries
1 jar of lemon curd
1 easy-bake tart shell (Tenderflake works well)
500g mascarpone cheese (buy 2 regular containers and you'll be set)
Bake tart shell as per box instructions. Make sure you pierce tart shell with fork tynes once you've defrosted it and just before placing it in oven. Once tart shell is baked, let it cool before proceeding with recipe (approximately 10 mins).
Mix half the jar of lemon curd with the mascarpone cheese. Spread cheese evenly in tart shell.
Mix 3 tbsp of remaining lemon curd with blueberries in a separate bowl. Spread coated blueberries on top of cheese in tart shell. Enjoy!
